As a good skipper, I know that at sea you need to rely on an unbeatable crew, so over the years I’ve hired staff who share my vision… and can put up with me!
When you reach a certain level, you’re always under scrutiny. You can’t afford mistakes, nor can you be superficial.

My brother Giuliano manages front of house, and I personally take care of the kitchen staff. Meanwhile my sons Francesco and Lorenzo visit the auctions and the brand development.
A close-knit team is essential for that truly unique dining experience.

I was born in San Felice Circeo and grew up in Terracina, two beautiful towns overlooking the Mediterranean Sea, about 100 km from Rome.
