A passion for the sea
My passion for the sea began when I was a child. I was born in San Felice Circeo and grew up in Terracina, two beautiful towns overlooking the sea, about 100 km from Rome.
I’ve always been a rebel, which explains why, as a child, I spent more time unloading crates of fish than I did in school.
I spent my teenage years fishing, casting off baskets with 150 or 200 hooks each, and free-diving for seafood. In December, clad in a T-shirt in the middle of winter, I’d jump right in the water in front of Torre Paola. I didn’t even have the money for a wetsuit. But I was hungry.

Before opening the restaurant that bears my name, I opened Osteria del Pesce and then Assunta Madre. The secret of my success has always been obvious to everyone, right outside the restaurant entrance: 30, 40 or even 50 crates of fresh fish sourced from Terracina and other local auctions. Each crate is filled with treasures that only I know how to find, thanks to 40 years’ experience as a fisherman, fishmonger and restaurateur.
THE THRILL OF DISCOVERING
I grew up eating fish of extraordinary quality, cooked by my mother Assunta according to the traditional recipes of Terracina’s fishermen.
The recipes were simple. Because when the fish is good and the quality is high, you don’t need lengthy preparations or elaborate recipes to create great dishes.
